Quick and Easy

Here is a quick tip for all you busy momma's...


You can find these muffins mixes in the bakery aisle at the grocery store for around $1 and you simply add a 1/2 cup milk and bake!
Cheap, easy, and delicious!  It always comes with an added bonus... your house smells like you have been baking all day, but you don't have to tell anyone that it only took you 2 minutes of prep and 14 minutes of cook time :)

22.5 weeks

Today I am 22.5 weeks pregnant and this is what I wore...

Adventures...

This weekend was full of adventures.  On Saturday we went First Landing State park/beach.  We sat up in the dunes to get out of the wind and bake in the sun.  Ella had fun gathering shells and rocks, and making sandcastles with Daddy.  She played for about an hour and then she sat on a sand spur and the beach day was quickly over... poor thing :(







On Sunday after church we went to Williamsburg with the family to take the kids to Great Wolf Lodge... an indoor water park. I don't have many pictures because I was afraid to get my camera wet, but a good time was had by all :)

That's a wrap...

Meet my new favorite snack...

-Salad with red wine vinaigrette dressing and a toasted chicken with cheese wrap-


Toasted Chicken Wrap 
1 Toufayan plain wrap 
4 pieces of Tyson precooked chicken strips
small handful of shredded cheese of choice

-microwave chicken, spread cheese on center of flat wrap, add chicken, fold into a pocket and toast in the toaster oven for about 5 minutes. Enjoy!-

Hey Mama!



I am now 21.5 weeks pregnant and my pants are definitely a little snug... So hello maternity jeans, I still think they should be acceptable everyday wear even when NOT pregnant :)  When I was pregnant with Miss E I loved waking up every morning and dressing my baby bump, especially in the spring and summer months.  So I am going to start posting some of my maternity style throughout this pregnancy!  Here is today's look!

What's for dinner...



I love to cook but  hate trying to decide what to cook...
I have been craving some good pasta so last night I made Chicken Carbonara and Creme Brulee with fresh raspberries for dinner.  Boy was it delicious!
Below is the recipe, I kindof just winged it, so you may have to taste while cooking :)

Chicken Carbonara
1/2 cup of heavy whipping cream ( I added a little more for extra sauce)
1 cup shredded parmesan cheese ( may have to add more)
1/2 cup chopped red or white onion
1/2 cup chopped mushrooms (optional)
1 clove chopped garlic
1 tsp. extra virgin olive oil
4 slices of bacon
1 large or 2 small cooked chicken breast cut into strips ( I used Tyson's precooked grilled chicken strips)
your pasta of choice ( I just used regular spaghetti noodles)
salt and pepper for taste

Cook bacon, chop in pieces, and set aside.  While pasta is cooking begin making the sauce.  In a skillet sauté onions, mushrooms and garlic.  Once softened add the heavy cream, parmesan cheese, chicken, bacon, salt & pepper.  Let simmer for about 5 minutes and then serve over pasta.

Since we both forgot that Valentine's Day was Monday ( we were still on island time) I decided to make the hubby a special little surprise.  Creme Brulee is the hubby's favorite dessert and I used to make it from scratch a lot but with an active toddler that loves to "help" it is a little hard to do these days so I had to improvise.  .  Harris Teeter sells a boxed Creme Brulee and it does not disappoint!  All you need is 1c. milk and 1c. heavy whipping cream, it even comes with the sugar.  Buy a pack of fresh raspberries or blueberries and you are set.

Leavin' on a jet plane...


Well maybe not a jet, but definitely leaving on a plane to Costa Rica tomorrow morning!
Can you believe this is all we are taking for a WHOLE week?  
I am usually the over-packer... I pack for snow, rain, and sun... just in case.  So I think I made Josh proud!
Since the weather is suppose to be over 85' the whole time, we really didn't need much.  Just some cover-ups, bathing suits, tank-tops, sundresses, and flip flops!  I also plan on having beach hair so I didn't pack my entire vanity.  
I've had extreme a little anxiety over flying with Ella, I just don't want to have "that kid" on the plane.  So I packed her own little backpack with her own books, snacks, and toys.  I also downloaded her favorite Veggie Tales songs and movies on the iPad, I am sure passengers would rather hear Bob and Larry rather than a screaming kid :)  
Another highly recommended tip that I got was to take a child backpack harness (the little lamb attached to her backpack) so that they can walk freely in the airport and you have the peace of mind knowing that they are safe, no matter how you may feel about the whole leash thing (I was one of those, "I will never leash my kid!") but now I choose safety over appearance.

So say a little prayer for safe travels and I will be back, hopefully with a tan, in a week :)
